No time? No money? Looking to be more... svelte? Try this one; cheaper and healthier than the usual beef bolognese, but still utilizing that convenience jar of "spaghetti sauce." Goes together in a snap, but does take a half an hour to simmer.
Lentil Bolognese with Pasta
-In a large, high-sided saute pan, heat a couple tablespoons olive oil and saute 1/2 chopped onion and 2-3 tablespoons minced garlic. Add chopped bell peppers, mushrooms, carrots, and celery as you have them and desire them in your bolognese.
-When the veggies are beginning to brown, add 150 grams brown lentils and saute, stirring, until they begin to brown as well.
-Add 1 jar of your favorite marinara (mine is Newman's Organic Basil), 1 30oz can diced tomatoes, and 2 teaspoons bouillon of choice.
-Stir, bring to simmer, and reduce heat, simmering covered for 30-45 minutes.
-Meanwhile, cook 1 pound whole wheat pasta of choice, preferably spaghetti, rotini, or fusilli.
-When pasta and sauce are both done, add pasta to the sauce and stir gently, adding a little pasta water as you combine.
-Serve, topped with parmesan or parsley, as you desire.
Why is Devon writing The Green Notebook?
Two reasons. Mostly. I have a blog--The Yellow Notebook--but have noticed that blogs with specific goals seem to shine. So I decided that I would blog about the next two-and-a-half years as we work REALLY hard at squeezing my husband through nursing school while randomly making money, consistently saving ourselves money, raising small children, writing a novel, dealing with the current economy, trusting God and deepening our friendships, et al. Watch the balancing act! Also, my friends have been complaining that blogs tend to be, well... life edited. So I am going to try NOT to edit out the things that make us a real family with real financial and other struggles. And in this ring...
By the way, I have not named my children "Boy" and "Girl." I just like to refer to them that way on the blog. I also refer to my nephew as "Baby."
